I'm thinking of Ireland (spent 3 weeks there 2 yrs ago and loved it), England, Germany, France, Spain, Italy, Australia, and possibly somewhere in eastern europe still to be determined. I like your idea of taking courses while abroad. I've begun looking for language, cooking, and knitting workshops.
